Kale & Miso Pesto

This recipe saved my day! 😀

I wanted to prepare a quick meal after a long day at work followed by a couple of errands. I was also tempted of ordering a take-out meal since my kitchen is not usually well-stocked with fresh vegetables by end of week. I normally do my groceries shopping on a Saturday morning.

After a quick look over the web, I decided on this delicious plate of noodles with kale and miso pesto. The recipe below is based on a pesto sauce posted by Bon Appetit. I have used kale instead of baby spinach and adjusted the amounts of the remaining ingredients to suit my palate. Definitely a recipe to keep! 🙂 I paired this pesto with a serving of fresh udon noodles, which I have bought on my last trip to the Asian store.

Most of the ingredients in this recipe are always available in my kitchen. Therefore, it was very easy and quick to whip up this bright and yummy dish. While the water was boiling and the noodles where cooked, the pesto was also ready to serve.

Kale & Miso Pesto

A bright, yummy and quick to prepare meal


Ingredients

  • 3 large Tuscan kale leaves
  • 1 tbsp white miso paste
  • 2-3 tbsp lemon juice
  • 2 garlic cloves
  • 1 tbsp sesame oil
  • 3-4 tbsp rapeseed oil

Directions

  1. Roughly cut the kale in smaller pieces. In a pot of boiling water, blanche the kale until wilted.
  2. In a food processor, combine all ingredients and blend until smooth.
  3. Mix with noodles or your favourite pasta.
