My Vegan Challenge

As it is evident from my blog posts here, I like food (… a lot!!) and also like to try out different stuff. On a day to day basis, I tend to cook vegetarian meals but when we eat out we often opt for meat/fish dishes.

My husband and I have recently came up with the idea of taking the challenge to go vegan for a month. I never imagined myself having pasta without cheese on top, or skipping a classic Sunday brunch of poached eggs on toast. This challenge however, was in no way an attempt to go vegan forever. Going vegan means a total change, not just in your diet, but also in your lifestyle. It was an experiment to understand these challenges, try out new ingredients and new recipes.

We tried out a variety of recipes for light lunches, dinners and desserts too. We substituted the dairy milk for soya and almond milk, and the honey for agave syrup. Cooking such recipes at home was not difficult at all. We found a lot of recipes online that we would have wanted to try even if we were not on this challenge. However, when we felt like eating out on a weekend, it was not that easy to find a place that caters to our vegan needs.

Here are some of our favourite dishes we have prepared and eaten during our vegan challenge.
