Quiche is another all time favourite at home. It is great for Sunday brunch, light lunch or even dinner accompanied with a leafy salad. It is very simple to make! The basic ingredients for a quiche are the pastry, eggs and milk or cream. You can then opt for a vegetarian version or add meat if you wish. Actually you can top it up with whatever you fancy. Very often, I make it using leftover pastry, which I would have put in my freezer. I like to blind bake the pastry first, this ensures that the crust does not get wet and soggy. Here is an example of a simple quiche I prepared for Sunday brunch!
Quiche
Perfect for Sunday brunch, light lunch or even dinner!
Ingredients
- Shortcrust pastry
- 3 egg
- 200ml milk/cream
- Hard cheese, grated (I like to use Grana Padano)
- Carrots, shredded
- Zucchini, julienned
- Red pepper, chopped
- Spring onion, chopped
- Peas
- Salt and pepper
Instructions
- Preheat the oven to 180 degrees Celsius.
- Roll out the pastry and fit it in a round pie dish. Cover with foil and put some baking beans/rice as weight. Bake for 25 minutes.
- In a bowl, beat the eggs and milk together. Add salt and pepper to taste.
- Once the pastry is done, layer the vegetables and cheese in the bottom and then pour the egg mixture.
- Return to the oven and bake for another 25 minutes or until the eggs are set.
- Let it cool for 10 minutes before cutting into wedges.
